Food safety and hygiene management are of great importance for the Macao Institute for Tourism Studies (IFTM). IFTM's Educational Restaurant has successfully passed the HACCP certification conducted by Hong Kong Quality Assurance Agency (HKQAA) Macao on 15 July 2021.
Implementing strict food safety management systems and high hygiene standards such as HACCP ensures that all students and staff can experience working with internationally recognised food safety and hygiene standards while providing guests with a consistent, exceptional dining experience.
HACCP is an internationally recognised management system for food safety in the catering industry and is a worldwide food management system that allows establishments to execute food monitoring and control programs to prevent biological, chemical, and physical contamination along the food supply chain. It is a systematic approach to identify, evaluate, control, and prevent risk and hazards.
The IFTM formed a cross-departmental Food Safety Team and has successfully implemented and fulfiled all HACCP requirements. Each department involved was responsible for establishing the HACCP control system in their area.
The success of the external audit and passing of the assessment clearly states IFTM's commitment to continue striving for excellence, proactively promoting food safety, security, and quality control in the Macao food and beverage sector, while safeguarding the health and safety of students, employees and guests. As a result, the Educational Restaurant now has a food safety management system with leading international standards, further enhancing students and employees' awareness about food safety and at the same time minimizing food hazards.
